Raised on pasture and sunshine, these lambs grow slowly and naturally the way heritage breeds were meant to, resulting in beautifully fine-grained meat with a mild, clean flavor and exceptional tenderness. Unlike oversized commercial chops, these are true old-fashioned loin chops: smaller, elegant, and incredibly flavorful.
